Its rocky environment with vegetation that is so deficient but so special, full of aromatic herbs and salt from the Adriatic sea, brought to its pastures during cold winters by a strong wind called bura.
Ingredients: pasteurised cow's milk, cheese culture, kitchen salt, sage 0.2%, rennet, calcium chloride, lysozyme (from eggs). Minimum 45% fat in dry matter.
